The process is simple.Towards the end of November, the still unripe green olives are harvested by hand in order to make sure they remain intact. They are then stored in well-ventilated containers for the production process to commence within 48 hours. The leaves and branches are removed by means of cold water. Subsequently, pressure is applied in a hydraulic press machine, without the use of heat, warm water or solvents.
